Steps Cookies with apricot jam
First of all start preparing the shortcrust pastry, you can also prepare it the night before, the important thing is to cover it with plastic wrap and leave it in the refrigerator.
Pour the soft butter in the bowl, add the sugar the cinnamon powder and salt, work little with your hands add the eggs , always work quickly.
Finally add the flour, remove from the bowl and bring the cake base on the work surface to form a ball.
Roll out the shortcrust pastry with the help of a rolling pin.
Carve cookies with an 8 – 10 cm ( 3 – 4 inch ) round mold
Place a teaspoon of jam on half of the shortbread disks.
Cover with other disc halves, press down edges to seal .
Place in oven at 350° F (180° C). For 20/25 minutes.
Allow to cool completely before sprinkling with powdered sugar and serving!
