Ingredients Chicken breast baked with peppers

  • 2 poundschicken breasts ( boneless and skinless)
  • 1pepper (red)
  • 1/2onion
  • 1 cupchicken broth
  • 3 teaspoonssoy sauce
  • 1/4 teaspoonginger (ground)
  • 1/2 cupbutter (unsalted)
  • lemon
  • parsley
  • salt
  • pepper

Preparation

  1. To prepare baked chicken breast with peppers: preheat oven to 400˚F (200ºC).

    In a cup, mix broth, soy sauce, ginger, salt and pepper.

    Place the chicken breasts in a large baking dish , pour in the broth.

    Give it a quick stir to combine the chicken with the seasoning. Add the sliced peppers on top of the chicken pieces.

    Arrange the diced butter on top of the chicken and peppers.

    Bake for 25-30 minutes or until the chicken is cooked through and no longer pink .

    Garnish the chicken with peppers with lemon slices and fresh parsley.

    Serve hot!

  1. I just picked the last of the garden peppers this week, this chicken is going on the menu! Super simple but not lacking flavor -perfect dinner recipe!
