Coffee muffins with nutella filling

Coffee muffins with nutella filling (Muffin al caffè con ripieno di nutella) are delicious and fluffy treats with an irresistible creamy heart.

Easy and quick to prepare, these muffins will be perfect for breakfast or a healthy snack. If you want to prepare them for your kids, you can use decaffeinated coffee.

The coffee-chocolate combo is one of my favorites, truly irresistible.

Ingredients for 6-8 Coffee muffins with nutella filling

200 g flour
120 g sugar
2 eggs
50 ml coffee
50 g milk
2 teaspoons baking powder for sweets
120 g Nutella® (6-8 teaspoons)
1 pinch salt
80 ml sunflower oil

Tools

1 Muffins Tin
1 Electric hand mixer
2 Bowls

How to prepare Coffee muffins with nutella filling

Prepare the muffins dough

In a bowl, sift the flour with the baking powder and pinch of salt.

In another bowl, beat the eggs with the sugar for about ten minutes with electric whips. You will get a light and frothy mixture that has doubled in volume.

Add the flour mixture a little at a time, continuing to beat, and alternating with the milk, coffee and oil.

Pour mixture into muffin tin

Line the recesses of the muffin tin with the baking cups.

Fill the muffin pans with the mixture, until you are 3/4 from the height.

Mix 3 tablespoons of the mixture with a few teaspoons of Nutella. Pour a teaspoon of this mixture over each mixture in the muffin pan.

With that done, pour 1 teaspoon of nutella over each muffin.

How to bake Coffee muffins

Bake the Coffee muffins in a preheated ventilated oven at 350°F (180°C) for about 15-18 minutes. But always test the cooking with the toothpick test: inserted in the center of the cake should come out dry.

How to store Coffee muffins with nutella filling

Coffee muffins will keep for 4-5 days, sealed in a cake container or airtight container.

You can freeze the muffins when cooked. Before eating them, let them thaw at room temperature.
