Breaded chicken breast with cornflakes is a cutlet very easy to prepare and super crispy, it will certainly appeal to both adults and children.
This recipe is suitable for those who love crunchy foods and above all it can be done both with eggs and with lactose-free milk or soy or oats. At the bottom of the article you will find variations to prepare this super delicious second course.

Ingredients for two people:
- 150breast (per person)
- 30 gsugar-free Cornflakes
- 2 tablespoonsOil
- 1egg white
- 1 Bowl
- 1 Plate
- 1 Meat Tenderizer
- Greaseproof Paper
- 1 Baking Dish
Preparation of breaded chicken breast with cornflakes
First remove the chicken breast from the fridge and let it rest for a few minutes.
Spread the slice of chicken on a cutting board and cover it with plastic wrap, this allows you not to spoil the meat.
Lightly beat the meat with the meat beater, you shouldn’t thin it too much, otherwise it dries out during cooking.
In a dish crumble half of the cornflakes and add the rest whole.
Dip the chicken slices in the egg white, drain them well and then cover them with cornflakes making them adhere well.
Spread the slice on a baking pan with a sheet of parchment paper. Season with salt, sprinkle with oil and combine the rosemary needles to perfume.
If you like it add a sprinkling of pepper.
Bake in a hot oven at 200 degrees for about 15/20 minutes. It is enough to turn only once, with the help of a spatula.
Serve hot with mashed potatoes or with boiled potatoes or stewed pumpkin.
Do you want a more delicious version?
Cook the meat in a pan with 20 grams of margarine or lactose-free butter, also combine a clove of peeled garlic and rosemary.
Cook in a covered container for the first 10 minutes over medium low heat.
Then turn the slice and cook it in an uncovered container until cooked. It will take another 5/7 minutes.

Instead of egg whites you can use delactosed milk or soy or oat milk, in the second case add more salt or the cutlet will tend to be sweetish.
Try sugar-free wholemeal cornflakes , the slices will be even crisper.

– Instead of chicken you can try with turkey, surely it will have to cook for less time, otherwise it may become too dry. If this happens, you could eat it with barbecue sauce or ketchup.
– You can also try with pork, with arista or chop or with bone is better.
– You can try with veal slices. The meat shouldn’t be too thick, otherwise it remains raw inside and it could be cooked too much outside, so that to burn the breading.
