Wash the anchovies pressing with the thumb and forefinger to the gills of the fish. Pulling down, the head will detach easily, taking away even the bowels.
Try to open the fish without dividing the two fillets, pull away the bone stopping just before the tail: if the fish is fresh it will be very easy.
Rinse the anchovies quickly to remove the residues. Put them in a bowl.
Blend oil, salt, a nice sprig of parsley. Add 2 tablespoons of Parmesan cheese, the bread crumbs and blend again.
Spread the crumble on the anchovies on both sides and arrange them on 2 skewers. Put them on a baking tray lined with baking paper and grill in the oven at 200°C for few minutes, until golden and crispy.
Serve with lemon wedges.
