The first thing to do is remove the peel from the aubergines and put them in the oven with extra virgin olive oil or if you prefer boil them in water until they become soft
Mash the aubergines well until they become puree
Add the parsley, garlic.

Pass them through the breadcrumbs and continue until the mixture is finished
