Pastiera recipe with chocolate chips is a typical Neapolitan Easter cake. Is made with pastry filled with cooked corn, ricotta cheese and eggs.. If you prefer, you can also add custard, i put it. With those ingredients you will have 2 big pastiera, i made it one with a spoon of cinnamon on the top of it and I left the other like the original. Usually pastiera are also filled with candied fruit.. I prefer the chocolate chips.

Ingredients for the pastiera recipe with chocolate chips

5 cups flour (00)
1 cup sugar
1 cup butter
3 eggs (medium)
1 g lemon zest
1 orange zest

Ingredients for the custard

1 cup whole milk
4 yolks (medium)
1/2 cup sugar
1 lemon zest
4 tablespoons cornstarch

Ingredients for the fill:

2 cups cooked wheat (for pastiera)
1 cup milk
1 lemon zest
3 tablespoons butter
3 cups ricotta cheese (sifted)
6 cups sugar
5 eggs (medium)
3 yolks (medium)
1 spoon cinnamon flavouring
1 tablespoon orange flower water
1 coffee cup candied fruit ((if you want it))
q.s. chocolate (chips)

Let’s proceed with the making of pastiera recipe with chocolate chips

In a planetary pour the sifted flour, sugar, butter, the eggs (1) and start to mix it all until you will have a compact loaf.

Take the dough and create a ball with it (2).

Cover the ball with a film and let it rest in the fridge for 30 minutes.

In the mean time, cook the custard.

In a mug put the milk and vanilla and start to cook it.

In another mug mix with an electronic whisk the eggs with the sugar (3) until your compound will be bigger.

Now add the cornstarch and continue to mix it (4).

Add to the compound the hot milk, put all in a pot and start to turn it until you will have a cream (5).

Now put all in a mug and let it cool.

Now let’s make the cream with the cooked corn.

In a mug add the milk, the cooked corn and the butter (6).

Cook it all and turn it all often for 10 minutes until the milk will be all absorted (7).

Let it cool.

In a bigger cup add the fresh cooked corn cream, custard, eggs, cinnamon, the orange blossom water, sifted ricotta, sugar (8) and work it all with electric whips (9).

With and immersion robot now make a cream and add chocolate chips (10).


Pour it on a pastry board a little bit of flour.

Roll out the pastry with a rolling pinroll out and make a 4 mm thick pastry.

Cover a pastiera mold, with 30 cm of diameter, with flour and butter of the pastry (i used an disposable aluminum).

Pour the fill on the top of the pastry and level well with a spoon.

Put the pastry stripes, that you made with a washer on the top of your pastry, and cook it in a preheated oven at 356 degrees for one hour and let it rest for another hour.

Dust with icing sugar and serve the pastiera recipe with chocolate chips.
