1 kg mussels (black)
1 cup breadcrumbs (or stale bread)
1 sprig parsley ( )
3 oz pecorino romano
q.s. extra-virgin olive oil
q.s. pepper
q.s. white wine
1 clove garlic

Naturally the first thing to do is to open and to clean the mussels but you can also buy them clean and open yet. Take a cup and a colander and put the mussels under the water. Take off the byssus that it is the lateral filament and with a retina rub the mussels one by one until they will be clean. At this point use a knife to open your mussels. Positionate them one beside the other on a baking tray and add it a little bit of oil.Pour on every mussel the breading that you will make by mixing bread crumbs, the chopped parsley and the chopped garlic, cheese and pepper. Don’t add salt. Add also a little bit of oil and cook it in a preheated oven at 180 degrees for 20 minutes with grill cooking. After 10 minutes that mussels are being cooked add some white wine and then continue to cook until they will have a golden colour.
