Ingredients

1.25 cups flour (00 “210g”)
2.5 tablespoons potato starch (50 g)
1 tablespoon bitter cocoa powder (30 g)
1 sachet baking powder
5 eggs (medium whole)
2 eggs (yolks)
1 cup sugar
1/2 cup sunflower oil (100 g)
3/4 cup dark chocolate (chips (100 g))
1 pinch salt

For the orange crumble

6 tablespoons flour (80 g)
3.3 tablespoons muscovado sugar (50 g)
4 tablespoons butter (soft)
1 tablespoon orange ((orange paste. If you don’t have the paste, add a little grated orange peel))

Steps

Let’s start preparing the crumble. In a bowl, add the flour

the muscovado sugar

a pinch of salt

the soft butter in pieces.

Work with your hands until you obtain a powdery mixture

Add the tablespoon of orange paste. Find the orange paste recipe among the ingredients. If you don’t have it, you can easily replace it with grated organic orange peel.

Cover and leave in the fridge.

Now prepare the dough for the chocolate donut. In a stand mixer, if you don’t have a stand mixer you can easily use an electric whisk, add the eggs and egg yolks.

Add the sugar.

Work until doubled

Always with the stand mixer running, slowly add the sunflower seed oil.

In a bowl, combine the sifted powders, i.e. the flour, potato starch, cocoa and baking powder

Using a spatula and little by little, combine the powders with movements from the bottom upwards so as not to deflate the mixture 14) At this point, add the chocolate chips.

Pour the mixture into a 24 cm donut mould.

Add the crumble on top and cook in a static oven at 175° for 40 minutes.
