1 pound salmon (2 flunks)
1 avocado
1 lemon
7 tablespoons orange juice
q.s. salt
q.s. olive oil
q.s. parsley
1/2 teaspoon cornstarch

Collect the salmon in a bowl, pour over the juice of two oranges (7 tablespoons), a little oil, parsley and orange peel.
Let it marinate in the fridge for half an hour, turning it occasionally.
Heat very, very well a cast iron plate (or non-stick), sear the salmon 10 seconds per side.

Put the salmon in a vacuum cooking bag and extract the air (you can use a vacuum pump or immerse almost all the bag in water, close and let out the remaining air from a small opening, before sealing).
Cook at 125° F for 30-40 minutes, it all depends on the thickness of the slice.
Take the marinade, put half a teaspoon of cornstarch, stir and let it thicken on the fire.
You will have to get a thick sauce, but still fluid.

Peel the avocado, it must be soft, but still with bright and light pulp, blend it with lemon juice, orange juice, salt, oil and parsley.
You will need to get a smooth and velvety cream.

Spread the avocado cream on the plates, take the salmon slices of the envelope without breaking them and place them over the cream.
Pour some sauce obtained from the marinade that you have left to thicken and bring to the table.
