Meatloaf in crust with speck spinach cheese and boiled eggs…
I remember that my grandmother always made it and she could stuff it so much that it seemed to explode: soft cheese, hard-boiled eggs, cold cuts and so on!
My kitchen has always been inspired by grandmother’s, I loved being near her and observe while she was prepared her dishes.
When the holidays are approaching or Sunday is just around the corner, I think about what to prepare for my loved ones and I remember her proposing her dishes.
So these days I made this stuffed meatloaf that you see in the photo below, fragrant and delicious, with a rich and soft heart, which I enriched with a side of baked potatoes.

Ingredients

For the dough of the meatloaf

2/3 pound veal (minced)
3.5 ounces stale bread (not too dry)
q.s. milk
2 eggs (small)
2.5 parmesan cheese

For the stuffing and finishing

3 eggs (hard-boiled)
10.5 soft cheese
5 ounces spinach, leaves, frozen
1 roll puff pastry (rectangular, half roll for the finishing)
q.s. egg (beaten)
q.s. olive oil
q.s. salt
3.5 speck
1.7 pounds potatoes
q.s. olive oil
q.s. salt
q.s. black pepper
1/2 onion (average)

Cut the stale bread and sprinkle with milk, let it absorb all, then crumble it with your hands.
Collect in a bowl the minced veal, add the grated cheese, two eggs and bread soaked and squeezed.
Amalgamate with your hands, until you get a perfectly homogeneous mixture.
Let it rest for 15 minutes.

Collect in a glass bowl frozen spinach, salt them and give a drizzle of oil, cover with a plate or film suitable for microwave and cook for 8 minutes at maximum temperature.
Bake and stir.
If you do not have a microwave, cook them in a pan with a drizzle of oil and salt and squeeze at the end of cooking, you have to remove all the vegetation water.
Unroll the puff pastry, spread the mixture along, leaving the edges free.

Stuff with spinach, speck, cheese and boiled eggs, divide in half and add another layer of cheese. Place all the stuffing orizzontaly and in the middle of the meatloaf.

Roll tightly on the long side, seal the edges and tilt gently by placing the closure at the bottom, if you want, decorate with strips of pastry taken from another package.
Move to a suitable plumcake mold, brush with beaten egg and cook at 340 º F for 45 minutes.

Bake, let cool and serve with a side of baked potatoes.
For the potatoes, rinse and cut into pieces or in the shape you prefer, collect them in an oven dish, give a good turn of oil, add salt, pepper and rosemary.
Stir and bake in a ventilated oven at 390 º C for 35 minutes, turning them only at half cooking.
Bake when they are soft.
