SALTED CAPRESE CAKE
SALTED CAPRESE CAKE is a no-bake savory cake perfect as an appetizer or in a buffet when you want something tasty and fresh to serve in the hot season and you don’t feel like spending time cooking.
For the base you can use crackers, breadsticks, and even rusks, if they don’t contain sugar, just pulverize them in the mixer.
Once you have prepared the base and left it in the fridge or freezer to harden, you will be ready to fill it with a layer of Genoese Basil Pesto, tomatoes, mozzarella and basil leaves.
The final result will be a savory Caprese perfect for the summer without cooking, light but tasty at the same time, colorful and spectacular.

Savory Caprese Base Preparation
Place crackers in the mixer and chop finely. Transfer to a bowl, add melted butter and mix with a spoon. Add chopped parsley to the mixture.
Pour mixture into a pan and press with the back of a spoon and create a 2 cm border. Leave to rest in the fridge for at least 30 minutes.
Preparation of filling
You can prepare Genoese Basil Pesto at home or buy it. If you buy ready-made Basil Pesto, choose one of excellent quality.
Take the base from the fridge, remove from the mold, spread a generous layer of Genoese Basil Pesto on the base. Cut tomatoes and let excess liquid drain. Season tomatoes with salt and a drizzle of oil.
Arrange tomatoes on top of the Pesto layer, alternating tomatoes with slices of mozzarella. Decorate with a few drops of Genoese Basil Pesto and basil leaves.
NOTE
To remove the base of the cake from the mold I recommend passing the blade of a slightly moistened knife along the entire perimeter of the cake tin before removing it.
To prepare the base of the savory cake you can use crackers, breadsticks, sugar-free biscuits, savory croutons.
STORAGE
Salted Caprese can be kept in the fridge covered with cling film for a maximum of 2 days.
