Double cream pasta with ham and peas is a classic Italian recipe that was very popular in the 80s.

A simple but tasty first course to prepare in less than 30 minutes.

Every Italian family prepared it at least once.

There are many versions of double cream pasta with ham and peas: with double cream or with spreadable cheese, with cooked ham or bacon, with grated Parmesan or pecorino, different pasta shapes.

Whatever the version, the result is a creamy and delicious dish, perfect for those with little time available.

Recipe is very simple: start with a sautéed onion, add diced cooked ham, then peas (fresh or frozen).

Finally you decide whether to add double cream or just grated Parmesan or even spreadable cheese.

Today I made double cream ham and peas pasta using fresh pasta, cooked ham, peas and of course double cream!

Prepare this recipe yourself, it’s an excellent solution for those who have little time available but don’t want to give up a tasty dish.

Steps

Put a pan full of lightly salted water on the heat to cook the pasta.

STEP 1

Cut cooked ham first into slices and then into cubes of about 1 cm 1.

Finely chop the onion and pour into a pan with extra virgin olive oil.

Leave to fry for a few minutes on medium heat then add the peas.

STEP 2

Add a ladle of pasta cooking water and cook over high heat for about 15 minutes.

Pour the cooked ham into the pan, mix and cook for another 2-3 minutes.

Finally, add the double cream, mix and cook over low heat for about 2 minutes.

STEP 3

In the meantime cook pasta, following the times indicated on the package, drain “al dente” (about 2 minutes before).

Pour pasta directly into the pan with the sauce.

Stir to blend flavors.

Serve double cream pasta with ham and peas hot, sprinkling with grated Parmesan.

STORAGE

Double cream pasta with ham and peas can be stored in an airtight container for up to one day in the refrigerator.

NOTE

Cook peas for a maximum of 15 minutes to obtain the right consistency and bright colour.

To reduce calories you can replace double cream with cream cheese.

This recipe is also excellent prepared with bacon instead of cooked ham.
