PENNE al BAFFO are a very famous first course of pasta in Italy born in the 80s.

There are numerous versions: with seafood, with bacon, with peas.

Despite the different interpretations, the element that unites them all is the presence of the tomato sauce, the fried onion, and obviously the cream.

Ingredients

pasta (12 ounces short pasta (penne, fusilli, …))
cooked ham (3.5 oz Cooked Ham)
heavy cream (3/4 cup heavy Cream)
tomato puree (3/4 cup Tomato puree)
onion (1/2 onion)
extra-virgin olive oil (3 tablespoons of extra virgin olive oil)
parsley (Fresh parsley chopped q.s.)
salt (q.s.)
black pepper (q.s.)

Steps

STEP 1

Cut the cooked ham into thin strips and chop the onion finely.

Put the onion and ham in a pan with three tablespoons of extra virgin olive oil and fry for a few minutes.

Add the tomato puree, mix and cook over medium heat for about 5 minutes.

STEP 2

Meanwhile, cook the pasta in plenty of salted water.

Drain the pasta al dente and transfer it directly to the pan with sauce, add the cream and mix everything.

STEP 3

Taste and season with salt, add a little ground pepper.

Stir and finish cooking pasta.

Serve immediately adding chopped parsley.

STORAGE

Penne al Baffo are a dish that should be eaten immediately.

You can keep a maximum of one day in the fridge in an airtight container.

It is not suitable for frozen food.

NOTE

You can enrich the sauce with vegetables such as fresh spinach or peas.

As an alternative to cooked ham you can use bacon or shrimp.

If you prefer, you can reduce the amount of tomato sauce.
