Homemade ham and cheese manicotti made with “crespelle” (crepes) as they say in Italy.

Easy to prepare even in advance and very fast.

A dish for Sunday lunch or for a special occasion but also for every day.

They are lighter than pasta but very tasty. They can become a single meal if served with meat sauce.

Ingredients

crepes

  • 1.5 cupsflour (200 g)
  • 4egg
  • 2 cupsmilk (490 g)
  • 1 teaspoonsalt
  • q.s.butter (for pan )

filling

  • 20 slicesham, high quality
  • 6 ouncescheese slice (175 g)

top

  • 1/2 cupcheese (grated Parmesan )
  • q.s.butter

Preparation

STEP 1

  1. Put all the ingredients of the crepes in a blender.

    Blend until all ingredients are well blended and become smooth.

    Let it sit for 20 minutes.

STEP 2

  1. Melt one teaspoon of butter over medium heat in a 9-inch non-stick pan.

    Pour in a small amount of batter.

    Turn the pan to cover the bottom and form a thin film.

  2. Cook for about 20 sec. for each side.

    Transfer the crepe to the plate and continue until all the batter is finished.

STEP 3

  1. Place a slice of ham on each crepe, add cheese (fontina or mozzarella or gouda) and roll onto a baking tray with the seam facing down.

STEP 4

  1. Preheat the oven to 350 F

    Lightly grease the pan.

    Put a layer of sleeves.

  2. Sprinkle with grated Parmesan and a little butter.

    Bake in the oven at 350 F for 25 minutes. The last 3 minutes turn on the grill until the cheese melts

NOTE

If you do not use the crepes immediately, wrap in cling film and refrigerate for 3 days or freeze for up to a month.

Alternatively you can fill them with a delicious blend of ricotta, mozzarella, parmesan, romano and spinach.

Before cooking you can dress them with tomato sauce and extra Parmesan
