This chicken with vegetables recipe is one of the typical recipes of the Italian tradition and is called “pollo alla cacciatora”, Chicken alla Cacciatora.

There are many versions, the one I propose today was prepared by my grandmother when I was a child.

Simple but super tasty chicken and vegetable recipe.

A real delight for softness of the chicken and the sauce to be collected with bread.

At that time there was no slow cooker but since I own I used it very often cause is very useful and allow to do something else while it cooks.

The slow cooker moreover makes meat more tender and tasty through spices and vegetables.

My grandmother’s recipe is with tomato but you could also not use it.

  • 1chicken (about 42 oz or 1,2 kg)
  • 7 ouncestomato pulp (200 g)
  • 1onion
  • 1/2 cupwine (red)
  • 1carrot
  • 2 tablespoonsolive oil
  • 1 stemcelery
  • 2 sprigsrosemary
  • 1 clovegarlic
  • q.s.salt
  • 1 sprigparsley


step 1

  1. Clean celery, carrot, onion and chop them in the mixer.

    In a saucepan or directly in the slow cooker pan, fry the vegetables with 1 tablespoon of oil on the stove.

  2. Add the chicken and brown the skin.

  1. Take half of the vegetables and create a layer at the base of the slow cooker.

    Place the chicken pieces on top.

  2. Add the rosemary, garlic cut in half and the chopped parsley.

    Finally the tomatoes and the remaining part of the vegetables. The chicken must be covered with the vegetables.

  1. Add 2 tablespoons of oil, wine, salt and pepper.

    Cover, and cook for 3 hours and 30 minutes at the maximum temperature (HIGH) or 7 – 8 hours on the low temperature (LOW).

  2. Once the cooking time is over, to have a thicker and creamier sauce, blend it with an immersion blender.

    Enjoy the chicken with Cacciatore vegetables while still hot.

ADVICE You can prepare the chicken in advance and reheat it when needed. If you don’t like tomato you can not use it.
